Why it matters:
Our choices concerning how we eat and what we eat play a crucial role on our impacts on the environment.
Recap:
The more we understand and are conscious of our food system, where our food comes from, how it was grown, how it comes to us, what we choose and how we prepare it the better we can improve the environment as well as our bodies, minds and spirits. Laura Stec and co-author and meteorologist, Dr. Eugene Cordero have provided us with Cool Cuisine: Taking The Bite Out Of Global Warming, showing us how the agrochemical food system and our food choices affect global warming and how our choices can be used to reduce global warming.
Commentary:
For those that aren’t ready to take the step to vegetarianism at least a predominantly vegetarian diet can be a goal. Reducing meat and fish consumption by 20% can have a massive impact on climate change. Livestock is responsible for 18% of greenhouse gas emissions and 80% of anthropogenic land use, understanding the steps of the food system is crucial. Becoming a conscious foodie may have an even greater impact on the environment than transportation.
